Aged on full lees with no battonage. Pineapple, guava, perfectly ripe mango skin and lilikoi. Driving and elegant natural acidity and a wash of juicy tropical fruit with hints of glacé ginger and nutmeg spice. A fuzz of nettle texture and the wine finishes quite full bodied. It's a sauvignon blanc made with care, attention to detail and purity of fruit.

The Crayères vineyard, named after the chalky limestone soils reminiscent of Champagne, is meticulously managed, with hand-picked fruit and precision winemaking resulting in a Sauvignon Blanc that’s more about depth and finesse than simple fruitiness.

Pale gold in the glass, the wine opens with an intriguing bouquet of citrus blossom, white peach, and guava, alongside more savoury notes of crushed herbs, flint, and a subtle smoky edge from partial barrel fermentation. On the palate, it’s rich yet beautifully balanced, with ripe lemon, grapefruit pith, and green apple flavors layered over a creamy texture. Vibrant acidity cuts through the wine’s weight, while a mineral-driven finish leaves hints of almond and saline complexity.
