This Cabernet Sauvignon has a wonderfully expressive varietal aroma while the blend of McLaren Vale and Coonawarra highlights the best aromas and flavours that Cabernet has to offer - peppermint, violets, chocolate, leather, black olive and menthol with oak influenced toasty vanilla. ‘Cork difficult to remove. Need to use ‘Ah-So’ to open, waiters friend are too fat. Brick red colour. Clean Coonawarra dominant, herbaceous fruit. Acid dominant, no V/A evident. Acid softer than 1991. 2½hours open: Clean fresh aromatic, lifted Coonawarra cabernet fruit. Tannin structure opened up acid still evident. The wine with food takes on a new dimension accentuating the Coonawarra characters. Decant ½ hour prior to serving.’ Tasted Aug 2014.
