A classic semillon bouquet and entry to the mouth; a mix of grass, herb, lemon and mineral; long finish.
250 dozen were matured in bottle in temperature-controlled storage at the winery. It has the special conjunction of sparkling freshness and bite on the one hand, complex glace lemon minus the sweetness (an oxymoron, I know), lemon zest, and a hint of honey on the other. This is remarkable value for a wine over 6yo.
