Crafted in Methode Traditionelle 100% pristine hand selected Chardonnay grapes were whole bunch-pressed, under went partial malolactic fermentation and batonnage in tank before bottling for secondary ferment. Wine was aged on lees for 5 years and has minimal dosage. Harvested: April 2012, Disgorged: October 2017, Alcohol: 11.6%, Dosage: 2g/L Pale straw with fine mousse and persistent bead. Gentle floral notes with a hint of seaspray. Crisp lemon and delicate granny smith apples provide understated complexity.
