Handplunge takes it's name from the technique used during fermentation where the cap is plunged down into the fermenting must by hand. Like a tea bag in a cup of tea, the flavours and colour are gently extracted.
Fermented in 1 tonne open topped fermenters the Handplunge is made in limited quantities (typically 100 dozen) and spends 15-20 months in carefully selected new American Oak barriques.
Bottled unfined and unfiltered to retain as much natural flavour as possible.
