After whole bunch pressing the free run juice is settled and transferred to oak. A wild yeast starter creates a warm natural fermentation which is undertaken in 1000L German Oak Fuder barrels, before its rested on lees prior to racking.

‘The Fuder Clayvin Chardonnay sure adds to the growing list of absolute knock-out Chardonnay’s of true global significance emerging these days from New Zealand. The highly revered Clayvin vineyard, from which this comes, does not fail to live up to its reputation, yielding a profoundly intense and complex wine redolent of ripe peaches, acacia honey, cashews and crushed chalk with marzipan and brioche nuances. Medium-bodied, it fills the mouth with savoury and mineral flavours with a satiny texture and lively acid backbone, finishing with lingering honey-nut notes.’

‘From Giesen, this wine is grown in the famous Clayvin Vineyard, in the Brancott Valley, and fermented and matured in 1000-litre German oak casks (fuders), which 'develop greater complexity and refinement, but the oak doesn't dominate'. The tight, youthful, age-worthy 2014 vintage (5*) is bright, light lemon/green, with a fragrant, complex, slightly smoky bouquet. Mouth-filling, it is elegant, with concentrated grapefruit and peach flavours, integrated oak, fine acidity, and a powerful, lasting finish.’ Drink 2016 – 2023
