Mourvedre and Grenache grown on limestone cliffs above the Mediterranean are chilled and gently pressed then blended with the pale juice of ‘saignée’ Syrah and cold fermented. A portion of Grenache and Syrah finish their ferments in barrel and this provides excellent structure around elegant, lively and lingering red fruit characters of strawberry and cherry zest.
Also, a story for the table:‘saignée’ - pronounced ‘sonyay’, is the bleeding of juice after limited contact with skins. As a result there is pure fruit flavour balanced with a wonderful fresh, clean, lingering mouthfeel that matches exceptionally well with seafood, preserved meats, roast pork meats and turkey.
