Merrill is in a position where he is happy to keep his wines for a few years before release. This one is a case in point. It’s a McLaren Vale/Coonawarra blend that brings the virtues of both regions into the equation with the plush plump middle palate of McLaren vale and the linear elegance of Coonawarra. Dark plum and dark chocolate with an edgy leafy black olive merge through a complex palate. Just a little light cedar and chocolatey light leather on the finish. But there’s still more.

The Geoff Merrill wine making philosophy has been and always will be, to make wine that allows regional, varietal and vintage expression, without excessive winemaker intervention. Great wine is a matter of balance and our passion for subtle, elegant and harmonious flavours in wine is well documented.
This Cabernet Sauvignon has a wonderfully expressive varietal aroma while the blend of McLaren Vale and Coonawarra highlights the best aromas and flavours that Cabernet has to offer - peppermint, violets, chocolate, leather, black olive and menthol with oak influenced toasty vanilla. It is medium bodied with a generous mouth feel and a long finish. Ideal with roasted or grilled lamb.
