Chloé Cuvée is Sidewood’s statement sparkling, a wine that shows just how well the Adelaide Hills can handle traditional method styles when patience is part of the plan. Founded by Owen Inglis and guided in the cellar by Dylan Lee, Sidewood has steadily built a reputation for precision sparkling wines, and this cuvée sits at the top, only released with extended time on lees to build real depth and complexity.

The 2015 vintage has had the benefit of that time, and it shows in the glass. Fine, persistent mousse carries aromas of lemon curd, green apple and white peach, layered with brioche, toasted almond and a hint of honey. There is a subtle citrus zest lift that keeps everything feeling fresh despite the development.

Across the palate it is elegant and creamy, with a beautifully integrated bead and a line of acidity that gives the wine drive. Flavours move from fresh citrus and orchard fruit into more savoury territory, biscuit, hazelnut and a gentle toasty note, finishing long and refined with a touch of mineral.

Winemaking follows the traditional method, with careful base wine selection and extended lees ageing playing a key role in building texture and complexity. The result is a sparkling that comfortably sits alongside far more expensive examples, offering both richness and precision.

This is made for celebration but also for the table. Fresh oysters, lobster, or even roast chicken with herbs all work beautifully. It also pairs well with dishes that carry a bit of richness, where the acidity and fine bead can cut through.

Drinking beautifully now, it will continue to evolve over the next five to eight years, developing deeper nutty and honeyed notes while retaining its freshness.
