The Adelé range has a dedicated focus on Natural and Biodynamic principles, which revolve around the guiding philosophy of minimal intervention in both the vineyard and winery. The wines are all fermented from indigenous yeasts, using skin contact and whole bunches. No sulphur is used and the wines are 100% unfiltered.
They are produced in genuine small batches, with an average production of only 100 dozen per year. Winemaker Ben Ranken has just been named a Young Gun Finalist in the 2019 Young Guns of Wine Awards.
Four Burgundy clones, whole-bunch pressed to French oak (20% new) for wild fermentation and 10 months maturation. You have to wait until the last sip and aftertaste to catch the quality of this chardonnay, which until that point seems unable to circumnavigate its minimal alcohol. How it has achieved its flavour profile is a mystery.

I know a few Adeles, notwithstanding they are usually ‘double L’ Adelles, but that is by the by. All are nice humans too. This Adele here is pronounced more Italian than French however. A portion hangs out in new oak (25%), whole bunch pressed, natural ferment, hangs out on lees for a year before bottling.
Ripe stone fruit, faint toasty notes, whiff of honey-butter. Juicy in the palate, crisp in acidity and green apple flavours, shows some resinous cedary character and woody spice. Despite the presence of oak in the wine it holds a lean, fresh vitality. Nice drink.
