Christian Zago is besotted with naturalness. Christian’s Prosecco comes from a four hectare single hill-vineyard, called Cima, near Valdobbiadene. Family owned since 1924, the vineyard is completely farmed by hand. All processes, whether it be composting, manure application (from their own cows), pruning, leaf-plucking or application of biodynamic compounds, are with the intention of producing the most natural end product.
