Pale rose in colour the wine shows notes of florals with fresh red berries, and dried cranberries. The time on lees provides a delicate hint of savoury notes such as brioche and cream.
The palate has mouth watering acidity, supple tannins and superb layering of flavour like shortbread, red apple skin, poached quince and strawberry. The balance of the finish is between being long and delicate.

Sparkling wine has been produced at Stefano Lubiana Wines since 1993. All the sparkling fruit is grown and made in house enabling them to exercise full control, elevating them to the status of authentic ‘grower’ sparkling winemakers, a rarity in this country. Foudres (large oak vats) are used to ferment and age base wine transforming and softening the wines’ texture whilst creating layers of complexity. They take the time and care to handle the fruit very gently throughout the winemaking process and allow the tiraged wine space to evolve and mature by maximising its time on lees, usually between three and fifteen years.
