From the cool, windswept vineyards of Frankland River, this Cabernet Sauvignon highlights how purity, structure and site expression come together in one of Western Australia’s most distinctive sub regions. Cherubino’s clonal focus allows careful selection of Cabernet material best suited to the region’s later ripening conditions, where ironstone and gravelly soils deliver natural tannin, line and savoury detail. Frankland River’s long growing season and cool nights preserve freshness, giving a more restrained, classically styled Cabernet built on balance rather than sheer power.
Deep ruby to dark garnet in colour, the aromas show blackcurrant, cassis and dark cherry, layered with bay leaf, cedar, graphite and subtle spice. The palate is medium to full bodied, with concentrated dark fruit framed by fine, firm tannins and a bright acid spine that gives length and precision. There is a distinctly savoury, mineral edge through the finish that reflects the cool climate and iron rich soils, making this an excellent food wine.
It pairs beautifully with roast lamb, grilled steak, beef ribs, mushroom dishes and hard aged cheeses. While impressive now with decanting, it is built to cellar for ten to fifteen years, developing classic cedar, tobacco and earthy complexity.
