Single-vineyard sparkling chardonnay from Pipers River; whole-bunch pressed, fermented and aged in mature French oak barriques for eight months before 4.5 years on lees. Pale straw with a fine, energetic bead and mousse. Aromas of green apple, preserved lemon, fresh brioche, white flowers, stone, honeysuckle and vanilla poached pears. Expansive apple fruits with a sheath of soft spice are joined by clotted cream and nougat tones before focussing on the exit finishing crisp and moreish.

Pale gold in colour with an exceptionally fine bead. Aromas of white florals, fresh straw and honeysuckle with notes of toasted brioche. The palate is elegant and poised. Vanilla bean and spiced pear mingle with lemon zest and hints of sea spray. This is a sophisticated, savoury wine with fine, creamy, nougat texture from extended time on tirage and long, chalky, mineral acidity.
