From the cool, rolling vineyards of the Yarra Valley, Chandon Vintage Brut reflects the estate’s long standing commitment to méthode traditionnelle sparkling wines in Australia. Established in the 1980s as part of Moët & Chandon, Chandon has helped define premium Australian sparkling through meticulous vineyard selection, cool climate fruit and extended ageing on lees. This vintage cuvée draws primarily on Chardonnay and Pinot Noir, capturing both freshness and layered complexity.
A fine bead streams through a pale straw gold with bright green highlights. Aromas unfold with lemon zest, green apple and white peach layered with brioche, toasted almond and a subtle hint of nougat. There is an inviting balance between vibrancy and gentle autolytic richness.
The palate is crisp yet creamy, delivering citrus and orchard fruit flavours framed by lively acidity and a refined mousse. Notes of hazelnut, pastry and a delicate mineral edge build through the mid palate, leading to a long, elegant finish that feels both fresh and composed. While beautifully expressive now, this vintage Brut will continue to develop additional complexity over five to eight years.
Fresh oysters with a squeeze of lemon, tempura prawns with a light soy dip, or a plate of fried chicken disappearing far too quickly. A spin of Chic C’est Chic or something celebratory from Daft Punk setting the tone, the bubbles lifting the room into that effortless, sparkling kind of joy.
