The grapes are hand-harvested, gently destemmed, and then ferment for six weeks in open concrete tanks, using indigenous yeasts. The lightly pressed wine is cellared with minimal intervention and aged at leasts 12 months, in new French oak casks.
Deep magenta. Complex aromas of red berries and spices dominate the nose. This wine has an outstanding elegance and power, combining with minerality and precision, perfectly reflecting the terroir of Heathcote. Drink it with wok-cooked vegetables and braised beef with bay leaves. La Pleiade will easily age 20 years.
