66 months on lees before being disgorged, and with six months on cork before being released. 4.5g/L dosage. A very bright green gold. Tiny, persistent bead. Discreet with aromas of fresh-out-of-the-oven baked apple, citrus scents and a gentle nuttiness. Gently caresses the palate, which is very even, chalky and long. Lovely wine from start to finish! Drink now and over the next four to six years.

Oakridge has been one of the Yarra Valley's leading wineries since its establishment in 1978, earning particular acclaim for its elegant Chardonnay and Pinot Noir. Under the guidance of chief winemaker David Bicknell, the estate has developed a reputation for wines that reflect the region's cool climate character. This 2019 Blanc de Blancs is a delightful sparkling expression of that philosophy, combining finesse, freshness and beautifully developed complexity.

Made entirely from Chardonnay, the 2019 reflects the Yarra Valley's suitability for premium traditional method sparkling wine. Extended time on lees has contributed a creamy texture and savoury depth, while the fruit retains the bright acidity essential to fine Blanc de Blancs.

Pale gold with a delicate, persistent bead. Lemon zest, green apple and white peach mingle with toasted brioche, roasted almond and a hint of honeycomb. The palate is finely textured, with crisp citrus, subtle orchard fruit and a lovely creamy mousse. Gentle notes of pastry and toasted nuts lead into a long, refreshing finish with a touch of mineral salinity.

Try it with freshly shucked oysters, crab and chive tartlets, or tempura zucchini flowers with lemon aioli. It would also be delicious with smoked trout, crème fraîche and dill on crisp rye toast.

Cellaring: Drink now to 2032. Already showing attractive complexity, with the freshness to develop further toasted and savoury notes.
