Low-temperature fermentation in stainless steel, a percentage went through mlf in French oak. Matured 30+ months on lees. With 7.5g/L and modest acidity by sparkling wine standards, expect a well-rounded, food-friendly young sparkling. Excellent drinkability here in white peach, melon, citrus and biscuit flavours with honeysuckle lift, all nicely balanced by the pleasant ping of acidity.
