The 2021 Savigny-les-Beaune La Dominode 1er Cru has another complex bouquet from Pavelot, predominantly red fruit infused with damp earth, iodine and pressed iris flower aromas. The palate is medium-bodied with firm but quite chiselled, almost chalky tannins, certainly very saline with a focused, peppery finish that leaves the mouth tingling for 60 seconds afterwards. Bon vin. Drink: 2025 - 2040.

This aromatically similar to the Gravains though the spice nuances are a bit more prominent. The sleek and rich yet attractively detailed flavors exude a lovely minerality while also coating the palate on the nicely complex and highly persistent finale where a touch of bitter pit fruit character also slowly emerges. La Dominode is justly known for its ability to age and this should only add to that legacy. Drink 2031+ Sweet spot Outstanding
