The Chateau des Jacques Morgon is fermented in a combination of stainless steel and large open top fermenters, 50% whole bunch and 50% destemmed, and then aged for 6-8 months in Cadus French oak barriques.
Deep ruby crimson in colour. The bouquet shows notes of nuts and fleshy red berry fruits with a hint of vanilla and lavender.The palate has a wonderful richness of dark red and black fruits and firm tannins, with an appealing savouriness on the lingering finish. The long maceration provides a very good extraction of colour and tannins, which gives the wine structure and will permit medium to long term ageing, 10+ years.
Ideal with cassoulet, duck confit, game meats, lamb or steak, and white meats such as grilled chicken or rabbit.
