Clos des Hospices is one of those small, historic Grand Cru parcels in Chablis that flies under the radar, and Louis Moreau treats it with a steady, traditional hand that keeps the focus firmly on site. The Moreau family has been rooted in Chablis for generations, working Kimmeridgian limestone that gives the wines their signature tension and that unmistakable oyster shell character.
The 2020 vintage brings both ripeness and depth. Aromatics open with lemon curd, grapefruit and ripe apple, layered with a hint of white peach. There’s a strong mineral thread running through it, chalk, sea spray and a faint smoky note, with a touch of almond and spice adding complexity as it opens.
On the palate it carries real presence, medium to full bodied for Chablis, with a broad, textured feel that comes from both the vintage and careful élevage. But it never loses its line. A firm, saline acidity cuts through the richness, pulling everything into focus and driving a long, mineral finish that lingers with precision.
Winemaking is classic in approach, allowing the fruit and vineyard to lead, with oak used sparingly to support rather than shape.
This is Chablis that can handle serious food. Think lobster with lemon butter, scallops with a light beurre noisette, or a rich fish stew with saffron and herbs. It also works beautifully with something like a crab and leek tart or a well made fish pie, where the wine’s structure and acidity keep everything in balance.
Already showing beautifully with a bit of air, it will continue to evolve over the next ten to fifteen years, gaining more nutty, savoury complexity while holding that strong mineral backbone.
