Fruit comes off the Lopresti home block and lot 11. This is somewhat more imposing than the G.A.M, with deep blue and black fruits, spiced plum and dark cherry clad in oak (85% new French, 5% new American). There’s a lusciousness to the palate, but it’s paired with savoury tension, with clove, anise, cured meat, coal dust and a rugged earthiness accenting. Everything feels in place, though a little patience is required.

The Mitolo Savitar Shiraz from McLaren Vale is a powerful and luxurious wine that embodies the bold character of McLaren Vale Shiraz while showcasing Mitolo’s dedication to crafting wines of elegance and intensity. Named after a mythical dragon, the Savitar Shiraz exudes both strength and finesse, making it a standout in Mitolo’s portfolio.
On the nose, the wine reveals a deep and complex bouquet of blackberries, dark plums, and blueberries, intertwined with notes of dark chocolate, licorice, and black pepper. Subtle hints of vanilla, cedar, and a touch of smoky oak add further depth and intrigue.
The palate is full-bodied and richly textured, with velvety tannins and a vibrant acidity providing structure and balance. Flavors of concentrated black fruits are complemented by savory undertones of black olive, dried herbs, and earthy spices. The finish is long, layered, and refined, leaving a lasting impression of intensity and elegance.
Sourced from Mitolo’s premium vineyard sites in McLaren Vale, the Savitar Shiraz benefits from the region’s Mediterranean climate and diverse soils, which contribute to its power and complexity. The wine is aged in French oak barrels, adding subtle nuances of spice and texture while allowing the fruit to shine.
This Shiraz pairs beautifully with hearty dishes such as slow-cooked lamb shanks, beef brisket, or venison stew. It also complements rich vegetarian dishes like mushroom ragout or eggplant moussaka. While approachable in its youth, the Mitolo Savitar Shiraz has the structure to age gracefully for 15–20 years, developing further complexity with time.
