The fruit was picked at 13.4 baume, then dried for 25 days, as per the appassimento method used to make amarone; matured in French oak, with 60% new. Due to the loss of water from dehydrating the grapes, everything has been concentrated – flavour, acid and alcohol – but given the fruit was picked relatively early, there is still a herbal thicket and general sense of varietal vigour. Opulence is still the intent, though, with ripe blackcurrant and blackberry, preserved plum, dark spices, panforte, liqueur cherries, coffee grounds and currants soused in brandy. It’s big and bold, but balanced for the style.

The Mitolo Serpico Cabernet Sauvignon from McLaren Vale is a bold and opulent wine inspired by the Italian appassimento technique, which involves partially drying the grapes to intensify flavors and complexity. Named after Frank Serpico, a symbol of resilience and authenticity, this Cabernet Sauvignon mirrors those qualities in its rich, intense character.
On the nose, the Serpico reveals aromas of blackcurrants, dark plums, and dried figs, layered with notes of licorice, dark chocolate, and a hint of vanilla. Subtle undertones of cedar, tobacco, and spice add depth and intrigue, showcasing the complexity of this wine.
The palate is full-bodied and plush, with velvety tannins and balanced acidity creating a harmonious structure. Concentrated flavors of ripe black fruits are complemented by savory nuances of black olive, dried herbs, and earthy spices. The finish is long and luxurious, leaving a lingering impression of richness and refinement.
Sourced from Mitolo’s premium vineyards in McLaren Vale, the grapes are handpicked and carefully dried using the appassimento method, intensifying their natural flavors and sugars. The wine is aged in French oak barrels, enhancing its texture and adding subtle layers of complexity.
This Cabernet Sauvignon pairs wonderfully with rich dishes such as slow-cooked beef cheeks, lamb shanks, or venison stew. It also complements hard cheeses like aged cheddar or Parmigiano-Reggiano. While approachable upon release, the Mitolo Serpico Cabernet Sauvignon has the structure and depth to age gracefully for 15–20 years, developing further complexity over time.
