Peyrassol Clos Peyrassol from Côtes de Provence is one of the estate’s most refined and quietly luxurious rosés, a wine that reflects centuries of winemaking history on one of Provence’s most beautiful and storied properties. Commanderie de Peyrassol dates back to the thirteenth century, when it was founded by the Knights Templar, and the Clos surrounds the heart of the domaine. These old vine parcels sit on limestone rich soils mixed with clay, gravel and pockets of crystalline quartz. High elevation, Mediterranean breezes and dazzling Provençal light create fruit of remarkable clarity, freshness and aromatic depth.

Clos Peyrassol is crafted from a classic blend of Grenache, Cinsault, Tibouren and Syrah, with Tibouren playing a particularly important role in giving the wine its floral nuance and fine, salty edge. Grapes are picked at dawn for maximum freshness, pressed gently and fermented at cool temperatures to preserve brightness. Long, fine lees ageing adds silken texture without muting the purity of the fruit. Peyrassol’s modern cellar work is meticulous, but the spirit remains resolutely traditional: elegance, precision and a transparent expression of the limestone plateau.

The aromatics are delicate yet richly layered. Rose petals, white peach and wild strawberry mingle with grapefruit zest, orange blossom and a faint hint of jasmine. Beneath the fruit lies a cool mineral core, with subtle notes of sea spray, crushed stone and a whisper of thyme drifting through the bouquet. As the wine breathes, more detail unfurls: nectarine skin, soft spice and a chalky, saline lift.

The palate shows beautiful poise. Fresh red berries glide across a fine, powdery texture shaped by time on lees. Flavours of strawberry, peach, redcurrant and blood orange are carried by crisp acidity and a long, mineral line. The finish is clean, elegant and expansive with lingering citrus, florals and a gentle savoury note that reflects the estate’s limestone soils. It is a rosé that feels both luxurious and quietly understated. Two to three years in bottle will reveal even more nuance.

This versatile style is superb with Mediterranean dishes, grilled prawns, Niçoise salad, bouillabaisse, roast chicken with herbs, sushi, soft cheeses, tomato and burrata, charcuterie or fresh summer vegetables. Its finesse and subtle complexity make it perfect for long lunches and warm evenings.
