Pieropan Recioto di Soave Le Colombare is a golden, intensely aromatic dessert wine from one of the most historic and revered producers in Soave. Made entirely from Garganega grapes grown on volcanic soils in the classic zone’s prized hillside vineyards, this Recioto is crafted using the traditional appassimento method. Grapes are carefully hand-harvested, then dried on racks in the estate’s fruttaio for several months to concentrate sugars, acids and flavour. The result is a luscious, finely balanced wine with extraordinary depth and grace.
Fermentation is slow and gentle, preserving the wine’s delicate aromatics and natural sweetness. Ageing takes place in small oak barrels for 24 months, followed by extended bottle rest before release. Le Colombare is produced only in vintages that allow for perfect drying and optimal balance, making it both rare and age worthy.
In the glass, it opens with aromas of apricot jam, candied citrus, honeycomb, almond blossom, saffron and orange peel. The palate is silky and rich, yet vibrant, with flavours of dried stone fruit, caramelised pear, spice and a mineral lift that keeps the wine fresh. It finishes long and elegant, with layers of honey and citrus zest lingering on the palate.
Food pairing: perfect with blue cheeses like Gorgonzola Dolce, almond tart, saffron panna cotta, or roasted stone fruits with mascarpone. Also excellent with foie gras or simply as a meditative glass on its own.
Cellar potential: will age beautifully for 15 to 25 years, gaining notes of dried fig, beeswax and savoury complexity.
