A collaboration between Yering Station and Champagne Devaux, this cuvée blends classic Champagne varieties—predominantly Chardonnay with a generous proportion of Pinot Noir—sourced from cool-climate vineyards across the upper Yarra. Crafted using the traditional method, Yarrabank Cuvée spends extended time on lees (often over four years), allowing for creamy texture, fine bead, and the development of layered autolytic characters like brioche, almond and pastry. The Yarra Valley’s high elevation and cool conditions bring brightness and drive, balancing richness with clean, linear acidity.

In the glass, expect lifted aromas of lemon curd, green apple, white florals and baked croissant. The palate is dry and elegant, with precise citrus, red apple and nougat flavours over a silky mousse and long mineral finish.
