Guilhem and J Hugues Goisot Cotes d’Auxerre Gueules de Loup Bourgogne Blanc from Burgundy is a beautifully crafted Chardonnay that shows just how much depth and energy northern Burgundy can deliver. Goisot is one of the region’s most admired biodynamic estates, known for working meticulously with limestone rich soils and low yielding vines to create wines of purity, texture, and real personality. Gueules de Loup is a single vineyard site planted on steep slopes of Kimmeridgian limestone, the same ancient seabed that defines the best terroirs of nearby Chablis.
The fruit is hand picked and gently pressed before a natural yeast fermentation. Ageing takes place in a mix of stainless steel and older barrels to build quiet complexity while preserving clarity and mineral precision. The estate’s commitment to biodynamics gives the wine a vivid sense of place, with lifted aromatics and a clean, chiselled structure.
In the glass it shows pale gold with a green tinge. The aroma is bright and detailed with lemon peel, white peach, green apple, chalk, and a touch of almond. The palate is fresh and finely textured, offering citrus and orchard fruit wrapped around a firm, saline mineral core. The finish is long and pure with classic limestone tension.
It is excellent with oysters, sashimi, goats cheese, roast chicken, or simple pasta with herbs and lemon. It will also develop beautifully over the next five to seven years, gaining subtle honeyed and nutty notes.
