2021 Tar & Roses The Rose Shiraz, Heathcote

Black cherry in colour. Shaved dark chocolate, wild fennel, mulberries and earth are all evident on the nose. Hints of custard and blackberry vines. Caramelised beetroot with hints of sweet balsamic vinegar and mulberry jam dominate the palate. A beautifully integrated and complex wine. Excellent balance with fine lingering linear tannin. 

Grapes come from a selection of vineyards in Heathcote. Two are off the deep red Cambrian soil and the third comes from tougher more gravelly ground. The Cambrian delivers intense wines with chocolate and earth while the other terroir is more highly fragrant with good acid and sweet fruit.
