As a solo grape variety, CF is kind of hard to get right.
Raspberry, redcurrant, blackcurrant, some paprika, dried roses and mint. It’s medium-bodied, all the juicy small berried red fruits, fine dusty and slightly gravelly tannin, cranberry acidity, a cusp-of-ripeness yet varietal quality here, which gives it the slightly tense/edgy feel that’s so good about wines made from this grape, and a volcanic rocks and sappy finish of fine length. Mulberry with the stalks, some chew and excellent energy. It’s a bony wine of character and individual personality. Very good.

Whatever is in the water up there at Spring Farm? Adelina is in great form, and Col and Jen's newest releases offer more of the same. It's an equal blend of Cabernets Franc and Sauvignon sourced from organic vines in the Clare's Polish Hill River. Lovely sweet fruit and powdery tannins to close, Gary Walsh's notes below sum up the rest nicely. Col fills in the winemaking specs:
Keeping it simple in the shed, the fruit was hand-picked, then destemmed and crushed. Fermentation was on skins for just four days before pressing, and maturation was for six months in neutral French barrique. It’s a juicy, red-fruited, cool and spicy red with a twist of refreshing menthol and some fine tannins to close.
