This is the house take on amarone, but rather than grapes dried on racks, the cordon is cut, and the fruit partially dehydrates on the vines. The impact is a distant echo of the valpolicella wine, and the finished alcohol is not appreciably elevated due to a short desiccation window. High-toned notes of dried fig, panforte, cocoa bean, soused cherries, black plum, blackberry tart and anise lead. It’s still gripping onto more vibrant fruit, which is welcome, with grainy, puckering tannins. It’s like an older shiraz model with a modern engine.
