The fruit comes from the Willson family’s estate vineyards, where the cool evenings and maritime influence of Langhorne Creek help preserve freshness and fragrance. After fermentation, the wine is matured in a mix of new and seasoned French oak barrels and undergoes regular batonnage—lees stirring—a technique more commonly seen in white winemaking, used here to add depth and mid-palate complexity.
Expect aromas of blackberry, blueberry compote, mocha and dried herbs. On the palate, it’s dense and richly textured, with a dark chocolate core, smooth yet firm tannins, and a savoury edge that lifts the finish. It’s generous but never overripe.
