Clearly gently extracted and semi-carbonic, with a swathe of just-perceivable oak rallying Mediterranean scents of garrigue from thyme, rosemary and lavender, mitigating a core of sweet cherry and root spice. Drink like a rosé, with a solid chill.

Mazi Tora Mataro Cinsault from McLaren Vale is a bold yet fresh take on two Mediterranean varieties that thrive in the region’s warm climate. Mazi Wines, known for its small-batch, expressive wines, focuses on crafting blends that celebrate the purity of fruit and the influence of McLaren Vale’s diverse terroir. The name Tora, meaning "now" in Greek, reflects the wine’s vibrant, immediate appeal while still offering depth and structure for those who enjoy a more complex red.

Winemaking is kept simple to let the fruit shine. Mataro (also known as Mourvèdre) brings dark fruit, spice, and structure, while Cinsault adds brightness, red berry aromatics, and silky tannins. Fermentation is done with wild yeasts, and the wine is aged in older oak to maintain freshness while adding subtle complexity.

Deep ruby in color, the nose is layered with dark cherry, blackberry, and plum, alongside hints of dried herbs, black pepper, and a touch of earthiness. The palate is medium-bodied and lively, with juicy red and black fruits, bright acidity, and a fine tannin structure. A whisper of spice and savory depth lingers on the long, balanced finish.

This blend pairs effortlessly with slow-roasted lamb, grilled eggplant, or Mediterranean-inspired dishes with olives and herbs. It also works well with barbecued meats, charcuterie, and hard cheeses. Enjoyable now for its vibrancy, it has the potential to evolve over the next 2–5 years.
