The vineyards are located on the Peninsula’s north-facing slopes, with volcanic and clay-rich soils that help produce fruit with purity, depth, and fine structure. The maritime influence brings cool nights and long ripening, which gives the wine its trademark perfume and balanced acidity.
Fermentation is wild, using native yeasts, and a portion of whole bunches is included to add aromatic lift and gentle spice. The wine is matured in French oak, mostly older barrels, for finesse rather than flavour, allowing the fruit and site to shine through.
