Rosily Cartographer Cabernet Merlot from Margaret River is an organic red blend that reflects both the region’s exceptional terroir and Rosily Vineyard’s dedication to sustainable winemaking. Named after the French explorer François de Rosily, this wine pays tribute to discovery and craftsmanship, much like the pioneering winemakers who helped establish Margaret River as one of the world’s premier wine regions. Rosily Vineyard, certified organic since 2017, produces wines with minimal intervention, allowing the fruit to express the purity and balance of its maritime-influenced vineyards.
Deep ruby in color, the wine offers an inviting nose of blackcurrant, ripe plum, and dark cherry, layered with hints of bay leaf, cedar, and subtle earthy spice. The Cabernet Sauvignon component provides structure and intensity, while Merlot contributes plushness and supple tannins. On the palate, generous dark fruit flavors are complemented by fine cocoa, tobacco, and a touch of graphite. French oak aging adds depth and refinement without overpowering the fruit, leading to a long, smooth finish with lingering notes of black olive and dried herbs.
This Cabernet Merlot blend pairs beautifully with slow-cooked lamb, roast beef, or grilled portobello mushrooms. Its balanced tannins and acidity also make it an excellent match for hard cheeses like aged cheddar or Gruyère. While drinking well now, the Cartographer will continue to evolve over the next 5–8 years, gaining further complexity and softness.
