Here then is a premium warm climate Cabernet that announces its pedigree and Barossa origin the moment it pours, with bold, earthy, gumleaf sprinkled cassis aromas. This is a medium to full-bodied red with ample but silky tannins with a rich wave of dark fruit and will drink well for years to come.

Time allowing, give it a good whirl in the decanter before serving with charred crusts, savory herbs, and rich animal fats. Try with Argentinian asado style skirt steaks with fresh chimichurri, or beef short ribs braised with black cardamom, star anise and mature soy sauce.

The Dust Up Cabernet Sauvignon is made from grapes grown in a fifty-year-old Seppeltsfield vineyard farmed by the sixth Barossa generation of the Mattschoss family. At 255 metre altitude, it is a flat site of alluvial loam and red clay over lime and iron stone.

This wine comes from the excellent 2022 season. The handpicked fruit was destemmed keeping as many of the berries whole as possible. Indigenous yeasts got things started in open fermenters with juice being pumped over the skins twice daily. Once dry, the wine was basket pressed for a 24-month maturation in seasoned French oak barriques.

Tomfoolery is a project of winemaker Ben Chipman. Mentored by some of Barossa’s most respected names before venturing out on his own, he built his own winery in 2014 on the homestead he and his wife Sarah had purchased on the eastern slopes of the Barossa a couple of years earlier. His overall style could be described as aromatic, floral and structured.
