Just north of the Grand Cru slopes on the right bank of the Serein River lies Fourchaume, one of the most highly regarded Premier Cru vineyards in Chablis. The site enjoys generous sunlight and sits on the region’s famed Kimmeridgian limestone soils filled with ancient marine fossils, giving the wines both richness and a distinctive mineral backbone. Domaine William Fèvre has been one of the defining producers of Chablis since its founding in 1959 and today holds an exceptional collection of Premier Cru and Grand Cru vineyards. Under the guidance of winemaker Didier Séguier the estate focuses on sustainable vineyard practices and restrained cellar work so the character of each individual cru and the purity of Chardonnay remain front and centre.
The wine shows a pale gold colour with brilliant clarity. Aromas open with lemon zest, green apple and ripe pear layered with white flowers, flint and a subtle oyster shell note. As the wine breathes gentle hints of almond, hazelnut and brioche begin to emerge, adding complexity while preserving freshness. The palate is generous yet precise, with vibrant acidity carrying flavours of citrus, orchard fruit and chalky minerality drawn from the limestone soils.
There is a wonderful balance between richness and tension, finishing long and saline with classic Chablis purity. It will continue to evolve beautifully for ten to fifteen years and pairs wonderfully with oysters, lobster, grilled scallops, crab or delicate seafood dishes.
