Atlas Chardonnay from Adelaide Hills is a crisp, modern expression of cool-climate Chardonnay that captures the purity, finesse and vibrant acidity this elevated South Australian region is known for. Made by the talented Adam Barton, a winemaker with a meticulous approach and a passion for site-driven wines, this Chardonnay reflects both the pedigree of the Hills and a restrained, thoughtful winemaking style.
Sourced from vineyards in the higher reaches of the Piccadilly Valley and surrounding subregions, the fruit benefits from cool nights, long growing seasons and mineral-rich soils. Whole bunch pressed and wild fermented in a mix of French oak barrels and stainless steel, the wine sees partial malolactic fermentation and time on lees to build texture and complexity without sacrificing freshness.
The nose opens with aromas of white peach, lemon zest, jasmine and struck flint, followed by hints of cashew and brioche. The palate is bright and lively, with a core of citrus and stone fruit wrapped in creamy texture, fine acidity and a clean, mineral finish. It’s precise, quietly complex and effortlessly drinkable.
Perfect pairings include grilled prawns with lemon butter, roast chicken with tarragon, or a creamy leek and potato gratin. It also works beautifully with a soft-rind cheese like Taleggio or a goat’s curd salad with hazelnuts. Enjoy now or cellar for 3 to 5 years for added depth.
