50/46/4% pinot meunier (fermented in tank)/pinot noir/chardonnay (both fermented and matured in oak barrels). A splash of pinot noir is dosed in for colour. Almost three years on lees in bottle, too. There's a good deal of savouriness to this wine, with suggestions of rosehip tea, ginger and white balsamic joined by poached strawberries, cranberry drink and pomegranate juice. The bouquet is more savoury, with a touch of sea spray present, and the palate is vigorous in foamy fizz and quite vinous. It's a class act with complexity on its side.

Xavier Bizot and Lucy Croser have created something rather special with DAOSA, their sparkling wine project in the Adelaide Hills. Based at Terre à Terre in the Piccadilly Valley, the husband and wife team combines Xavier's French winemaking heritage with Lucy's family connection to Australian sparkling wine royalty. Their 2023 Sparkling Rosé is a beautifully crafted, traditional method wine that captures the elegance and freshness of the region's cool climate vineyards.
Delicate salmon pink with a fine, persistent bead. Fresh strawberry, raspberry and blood orange mingle with rose petals and a hint of toasted brioche. The palate is lively and finely textured, with bright red berry fruit, refreshing citrus acidity and a gentle creamy mousse. Subtle savoury notes add interest to the crisp, dry finish.
Try it with seared tuna and a sesame crust, Turkish lamb pide with pomegranate or roasted beetroot with labneh and pistachios. A lovely choice for a spring lunch or an evening with friends.
Cellaring: Drink now to 2031. Its fresh acidity and fine structure should allow further development, although the youthful red fruit is particularly appealing.
