David Moret has earned a loyal following for his beautifully crafted white Burgundies, working with carefully selected growers across the Côte de Beaune. Based in Beaune, he specialises in Chardonnay, favouring gentle handling and thoughtful oak maturation to preserve the character of each appellation. His Saint-Aubin is a particularly appealing introduction to the region, combining the generosity of ripe Burgundy fruit with freshness and understated elegance.
Saint-Aubin lies just west of Puligny-Montrachet and Chassagne-Montrachet, where limestone rich hillsides produce some of Burgundy's most exciting Chardonnay. The warm 2023 vintage has given the wine lovely fruit concentration, while the region's cooler vineyard sites help maintain balance and definition.
Bright pale gold with soft green reflections. Ripe nectarine, lemon curd and golden apple mingle with honeysuckle, toasted cashew and a delicate hint of baking spice. The palate is rounded and inviting, with succulent stone fruit, a gentle buttery richness and refreshing citrus acidity. A subtle chalky character keeps everything beautifully balanced, leading to a lingering finish of roasted nuts and lemon peel.
Try it with seared scallops and sweetcorn purée, crispy potato and leek rösti with smoked trout, or roasted cauliflower with miso butter and sesame. Its richness would also work beautifully with handmade crab linguine and fresh tarragon.
Cellaring: Drink now to 2032. Delicious for its generous fruit today, with enough freshness to develop further savoury complexity over the next several years.
