The name ‘Auvigue’ was already known in 1629 in the vineyards of Beaujolais and Mâconnais. Today, the grapes come from family estates covering 6 hectares including two that have been organically farmed for over 20 years in the Mâcon-Solutré and Pouilly-Fuissé appellations. To allow each parcel to present the unique microclimates, Jean-Pierre and Michel Auvigue always adapts the vinification process to the requirement of each plot. The wines are only lightly filtered before being bottled to retain all the elements required for the development of their true Burgundian nature.
Burgundy method of vinification in stainless steel vats. After fermentation the wine is aged on fine lees for 6 months, which adds complexity. It remains in the stainless steel vats until spring, then it is bottled to retain maximum freshness.
Aromas of white flowers and white fruits with a lovely freshness in the mouth. Drink it as an aperitif or with grilled octopus salad.
