Vines rooted high on the cool Carbonare slopes give a very different face of Soave, all energy and cut rather than weight. Old Garganega plants dig into basalt and limestone, bringing a strong volcanic imprint and a savoury edge that sets it apart from softer styles on the plain.
In the glass the wine is pale straw with green glints. Aromas lean toward lime zest, crunchy pear, white peach and chamomile, wrapped around a clear chalky, smoky mineral note. The palate is taut and vibrant, with citrus, green stone fruit and a gentle almond twist riding on bright acidity and a firm, stony finish.
Pair it with grilled prawns or Moreton Bay bug tails with lemon and herbs, pan‑fried snapper or barramundi, or a simple plate of fried calamari with aioli. It’s also excellent with asparagus risotto, zucchini fritti, fresh cheeses, or a classic margherita pizza.
