Some wines are ready to go on release, this isn't. To get an inkling of what's in store, bring out the decanter and a big bowled glass. The aromatics that emerge will be worth it: violet, rosehip, anise, red licorice, dark cherry and woodsmoke. It's the start of a wonderful wine trip into the world of the aromatic, the savoury, the earthy and the mineral-flecked direct from ancient Cambrian soils, all under the stern (as yet) direction of steely tannins and bright acidity. Further ageing is definitely recommended.

Jasper Hill Georgia’s Paddock Nebbiolo is a rare and compelling expression of this famously difficult Italian variety, grown far from its homeland in the distinctive red soils of Heathcote. Made from organically and biodynamically farmed vines within the iconic Georgia’s Paddock site, this Nebbiolo is both a tribute to tradition and a confident expression of Australian terroir. It’s one of very few serious Nebbiolos made in Australia, and it delivers the variety’s trademark structure, perfume and age-worthiness in a distinctly local voice.
Winemaking is minimal intervention, following the same principles that define the Jasper Hill ethos. The fruit is hand picked, wild fermented and aged in old French oak. There is no fining or filtration, and sulphur use is minimal. The result is a Nebbiolo that captures varietal purity and savoury structure without artifice.
The nose is lifted and complex, with notes of rose petal, sour cherry, dried orange peel, leather and crushed herbs. The palate is medium bodied and firmly structured, showing red currant, anise, tobacco, and a gentle earthy grip from fine, persistent tannins. There’s brightness and acidity through the finish, giving the wine tension and clarity.
Food pairing: perfect with duck ragù, mushroom risotto, truffle pasta, or aged hard cheeses. Also excellent with roasted meats or wild game.
Cellar potential: classic Nebbiolo ageing profile. Best from 2026 onward, with 15 to 20 years of graceful evolution ahead, developing more forest floor, spice and balsamic notes.
