Jean Louis Chavy works from the heart of Puligny Montrachet, part of a long family lineage that has farmed these limestone rich slopes for generations. His approach is classic and quietly confident, focusing on careful vineyard work and restrained élevage to let site and fruit take the lead. Even at the Bourgogne level, there’s a clear Puligny influence, that sense of lift and mineral detail that sets it apart from more generic examples.
The 2023 shows a lovely purity from the outset. Lemon zest, green apple and a touch of white peach come through first, followed by subtle almond and a faint chalky note that gives it shape. It feels bright and energetic, the acidity carrying the wine cleanly across the palate, with just enough texture through the middle to keep it balanced. There’s a fine, mineral line on the finish that lingers without any heaviness.
This is exactly the sort of white Burgundy that works effortlessly with seafood. Fresh prawns, oysters or a simple grilled fish with lemon and herbs all sit comfortably alongside it. It also pairs well with lighter poultry dishes or a soft goats cheese.
Drink it over the next 3 to 5 years while that freshness and clarity are at their peak. It’s a great example of how much character Bourgogne Blanc can deliver in the right hands.
