His parcels in Goldtröpfchen are planted to old, ungrafted vines rooted deep in blue and grey slate, producing fruit of tremendous concentration and aromatic lift.
The Goldtröpfchen Spätlese is harvested late, under perfect conditions, allowing botrytis to delicately concentrate sugars while maintaining vibrant acidity. Fermentation is natural and slow, and the wine is aged in large neutral fuder barrels to preserve purity and tension.
