Whole bunches are included in the ferment to build aromatic lift and crunchy tannin. Wild yeast fermentation and no additions keep the wine honest and expressive. It’s bottled unfined and unfiltered, with nothing added apart from a tiny touch of sulphur at bottling, if any at all.
In the glass, expect aromas of wild strawberry, cherry, crushed herbs, and peppery spice with a hint of raspberry leaf and dried rose. The palate is light to medium bodied with bright acidity, soft tannins, and a deliciously juicy finish. It’s lively, savoury, and made to drink slightly chilled.
