Such a distinctive wine, spicy and herbal, in a dried hardy herb way, not green. Pine resin, candied lime peel, mint gelee, pineapple sage, green grape, white pepper and some sappy florals. It’s got a bit of a bianco vermouth vibe – I mean that in a good way. Textural, lightly pithy, slippery, a little viscous, the finish clean but gentle.

Winemaking is clean and fruit focused. Stainless steel fermentation preserves aromatics, while time on lees adds a gentle roundness without dulling the wine’s snap. The style leans dry and food friendly, capturing the grape’s almond edged personality in a bright frame.
Pale straw in colour, the aromas open with pear, citrus zest and green apple layered with white flowers and a faint herbal lift. The palate is light to medium bodied and lively, with orchard fruit wrapped in crisp acidity and a soft textural edge. Flavours of lemon, pear and savoury almond run into a clean, mouthwatering finish.
It pairs beautifully with seafood, grilled vegetables, salads and Mediterranean dishes. Drinking perfectly now for its freshness and charm, it will hold comfortably for three to five years.
