From one of Chablis’ most reliable Premier Cru sites, Vaillons sits on classic Kimmeridgian limestone soils that give the wines their trademark tension and mineral drive. Louis Moreau, part of a long established Chablis family, continues to craft wines that lean toward purity and precision, letting the vineyard speak clearly without unnecessary weight.
The 2023 shows both freshness and a touch of generosity from the vintage. Pale straw in the glass, the aromatics are clean and lifted, lemon, lime and green apple layered with white flowers and a distinct flinty, oyster shell note that immediately signals Chablis.
The palate is crisp and finely structured, citrus and orchard fruits carried along a tight, mineral line. There is a subtle textural element that adds depth, but the focus remains on precision and energy. Bright acidity drives the wine through a long, saline finish, leaving a refreshing, mouthwatering impression.
This is a natural match for seafood. Oysters, scallops or grilled fish all work beautifully, as do dishes with a simple, clean profile where the wine’s minerality can shine.
Drinking beautifully now, though it will develop over the next six to ten years, gaining more complexity while retaining its core freshness.
There is a clarity here that feels unmistakably Chablis, pure, precise and quietly complex.
