Full-bodied old vine Cabernet Sauvignon with rich flavours of briary black fruit and tapenade
The DJ Cabernet Sauvignon is dedicated to DJ Oliver, a man of few words whose passion for grape growing is only exceeded by his passion for his family – and especially, sport.
This reserve tier red comes from the cool and long 2023 season in McLaren Vale and fifty-year-old vines in an estate block planted in 1973. It opens with rich aromas of briary black fruit and tapenade which spill into the full-bodied, smooth palate with varietal notes of bay leaf spice adding to the mouth filling flavours kept in check by fine, ripe tannins.
Pour to with rich lamb or beef dishes. You could try something like slow-braised beef short ribs cooked in a red wine broth flavoured with espresso, smoky pancetta and black Olives and served with a purée of roasted parsnips.
Enjoyable on release with plenty of air and would develop and keep well for years to come.
