Paxton Wines is a leader in sustainable viticulture in McLaren Vale, with vineyards certified biodynamic and organic, and a philosophy built around soil health, vine balance and minimal intervention. Graciano is a late ripening variety traditionally used in Rioja for its colour, acidity and aromatic lift, and in McLaren Vale it takes on a brighter, more expressive personality while retaining its savoury edge. The warm days and cooling Gulf St Vincent breezes allow full flavour development while preserving freshness, making this a distinctive and food friendly style.
Deep ruby to purple in colour, the wine opens with lifted aromas of dark cherry, blackberry and plum, layered with violets, dried herbs and subtle spice. The palate is medium bodied and energetic, with juicy dark fruit, firm but fine tannins and a bright acid line that gives tension and length. There is a savoury, slightly bitter edge on the finish, very much in keeping with Graciano’s traditional role as a structural grape, adding complexity and making it a natural match for food. It shines with lamb, chorizo, grilled meats, tapas, mushroom dishes and richly spiced Mediterranean cuisine. Drinking beautifully now for its vibrancy and freshness, it will cellar confidently for seven to ten years, developing more earthy, savoury and leathered notes over time.
