Upfront notes of juicy Bing cherries and ripe red currants are complemented by hints of clove and wild oregano. The palate is medium-bodied with a solid backbone of crushed stone minerality and earthy undertones. Well-structured tannins and balanced acidity provide a framework for the vibrant fruit flavors, making this Pinot Noir an excellent companion to a hearty beef bourguignon.

Peter Zemmer Rolhüt Pinot Noir from Alto Adige is a finely tuned, alpine red that showcases the precision, freshness and purity of Pinot Noir grown in Italy’s northernmost wine region. The Rolhüt vineyard sits at altitude near the village of Cortina sulla Strada del Vino, where cool nights, sunny days and mineral-rich, glacial soils allow the variety to thrive with finesse and aromatic clarity.

Grapes are hand harvested and undergo a gentle, temperature-controlled fermentation in stainless steel and large oak casks. A portion of the wine is matured in French barriques for several months to add structure and spice, while the rest remains in steel to preserve vibrancy and fruit expression. The result is a Pinot Noir that is light on its feet but layered, with both alpine freshness and earthy complexity.

The nose is bright and lifted, showing sour cherry, red currant, rose petal and a touch of wild strawberry, with hints of spice and forest floor. On the palate, it is medium bodied and silky, with flavours of cranberry, blood orange, baking spice and a clean mineral edge. The tannins are fine and chalky, the acidity firm, and the finish long and savoury with a subtle alpine herb note.

Food pairing: ideal with duck breast, mushroom risotto, grilled salmon, pork with fennel, or aged cheeses like Asiago or Fontina. Also excellent slightly chilled with charcuterie or roast chicken.

Cellar potential: designed for elegance and early enjoyment, but will develop nicely over 5 to 7 years, gaining more savoury and floral complexity with time.
